Tortilla Soup

  • 1 Carrot or handful of Baby Carrots
  • 1 Celery Stick
  • 1 Roma Tomato
  • 1 thin slice onion
  • 1 or 2 Cloves of garlic with skin
  • 1 Bullion Cube or Vegetable broth
  • Dash of Taco Seasoning
  • 1/2 cup Red cabbage
  • optional 1 California dried Chili
  • 2-3 Cups warm water
  • Blend in Vitamix or high powered blender 1-12 min until see steam escaping vented lid

Turn Machine down to Low

  • Add
  • 1/2 cup Black Beans
  • 1/2 cup Corn
  • Handful of Spinach
  • Handful of Raw Kale Chips

Pulse or turn on low for 3-10 Seconds

  • Yields approx. 4 servings
  • approx. 112 Cal per serving
